Honey Vanilla Granola

10-12 Servings

Total Time: 35 minutes

Ingredients:

3 cups rolled oats

1 cup almonds

1 cup pecans

1/2 cup pumpkin seeds

1/3 cup coconut oil

1/4 cup honey

1 tsp vanilla extract

Directions:

  1. Preheat the oven to 350 degrees F
  2. Line a baking sheet with parchment paper
  3. Combine oats, nuts, and pumpkin seeds in a large mixing bowl
  4. Measure out coconut oil and honey in a small pot and bring to a slow boil until coconut oil is completely melted. Take off heat and add vanilla. (If you want this step to be quicker you can microwave for 30 seconds)
  5. Stir mixture until coconut oil has completely dissolved
  6. Pour liquid mixture over oat mixture and stir completely and pour mixture on parchment paper
  7. Bake for 15 minutes, pull out of oven and stir, then bake for another 5-7 minutes or until granola turns light brown
  8. Let cool for 10 minutes in order to harden
  9. Enjoy!

I love granola… but I hate store bought prices! Every time I buy granola it’s usually too sugary, too oat-y, too nutty, or too bland… until I made this recipe! It has the oat and nutty flavors with a sweet hint of honey & vanilla.

You can eat this for breakfast with almond milk, eat for a midday snack, or bring as a side for lunch!
